Foods to Eat When You're Sick

Chicken Soup

Get a big soup pot. We, of course prefer cast-iron
How much of each ingredient depends on how much you gonna make. Remember intuitive cooking…talk about it.

Olive Oil
Minced Garlic
Onion
Carrots
Boneless Skinless Chicken Breasts
Salt / Pepper / Tarragon
  • Put Olive oil in a pot
  • Add minced garlic…the more the merrier…you’re sick anyway, who you gonna kiss?
  • Chop an onion and Saute for a few minutes
  • Add chopped celery and lots of chopped carrots
  • Saute again
  • Add cut up chicken. Boneless, skinless breasts, if you’re watching you’re fat intake.
  •  Boneless thighs, if you’re not…so much more flavor.
  • Saute til chicken is done… adding salt, pepper and good amount of dried tarragon.
  • Add Nice quality chicken stock…enough to create a soup-like consistency. Use your brain.

That’s it! If you want noodles or rice add it. I like to precook them, cause otherwise the soup gets too starchy.
 
If you’re sick, this soup tastes ever so much better if someone else makes it for you. You can quote us on that!

Pezole (Pesole)
    This is a good luck dish for New Years Eve in Hispanic cultures. Its good. It's what my dad wanted for his 81st birthday…not the recipe…just me to make it!

    Here’s the recipe:

    Big cast iron pot again. Make sure the chicken soup is put away.

    Saute:    Minced garlic, and onions

    Add:       Ground turkey and cubed pork, either from tenderloin or chops

    Cook:     Until meat is done

    Add:       2lbs. roasted, peeled, chopped green chilis, hot
                  2lbs. roasted. Peeled, chopped green chilis, mild
                  2lbs. Posole or Hominy

    All these are from frozen and can go in frozen or thawed. By the time this is done, it won’t matter.

    Add:     28 oz. can tomatillos, drained and chopped
                14 oz. can chopped tomatoes, undrained
                28 oz. chicken broth

    Now cook. Simmer for a few hours or til you go to bed. Let it cool on the stove a bit and then put it in the fridge in the pot, when you go too bed. Next morning, get it on the stove again. This is all done covered, stirring occasionally, to keep from sticking. This can go on for a few days, the more the better. By day three this has reached nirvana EAT!
