Milkshake ala Almond Joy
O.K. so I’m a bit lactose intolerant so we used soy
products. If you can handle the cow thing, feel free to use real milk products,
but don’t knock the soy thing til you try it.
- Soy milk
- Vanilla soy ice cream
- Unsweetened cocoa powder
- Nuts
- Coconut flakes
Put some soy milk in the blender. I usually fill it about a
third of the way. Next put in a couple good scoops of the ice cream. A
tablespoon of cocoa powder, handful or nuts and some coconut flakes.
For an
extra zing, sometimes I add a tablespoon of Frangelico or Amaretto. Now
blenderize! If its too thin add some more ice cream. If too thick, some more
soy milk.
Variations:
try omitting the nuts and coconut and just adding a coffee liqueur. Also try
adding some frozen cherries and some chocolate liquer like Godiva. Careful this
is addictive.
You’ll be having milkshakes for breakfast.

Patty Melt

- Rye bread

- Hamburger
- Onions
- Butter
- Cheddar cheese
First slice
your onions and sauté them in butter til they just begin to brown. By the way,
do you know how to slice an onion? Cut off the ends and then cut it in half so
you have two flat surfaces to cut the onion. This way the onion doesn’t rock
when you’re trying to cut it. The only time this
won’t work is when you’re
making onion rings,
cause then you need the actual rings.
Remove the
onions and place them in a bowl. Next look at your slices of rye bread and form
hamburger patties that will fit them. This usually means not perfect circles.
When I don’t want to eat as much, I pick slices closer to the ends so that
they’re smaller. Sam, of course, likes BIG slices from the center of the loaf.
Put a bit more butter in your pan that you just cooked the onions in… if you
need it. Fry up them puppies until they are still rare in the center, flipping
once. Remove from the pan, which by the way, should be cast iron, for the best
all around patty meltiness.
Now assemble
the burger. Put a slice of cheddar on a slice of bread. Then put onions on top of the cheese.
Next put the burger on top of the onion and then a slice of cheese and then the
other slice of rye. Melt some more butter in the pan and place the burger or
burgers in the pan. Fry until it is golden brown and then flip it. Fry that
side to same color and VOILA…a perfect patty melt. You will thank us for this
one!
Oven Roasted Potatoes

Sam and I went round and round on this one. He wanted FRIED
potatoes a.k.a. French fries. I don’t want the fat or the mess, so in the end I
won out! He also wanted regular potatoes, but we all know sweet potatoes are
healthier…so again I won. The one concession I did make was to get the less
orangey and more golden sweet potato….it was fantastic and a bit less sweet
which worked perfectly.
- Golden sweet potatoes
- Olive oil
- Rosemary or whatever spice you prefer
- Salt
- Sugar
Preheat the
oven to 400 degrees. Cut the potatoes into small chunks, if you like them
crispy through and through. Bigger chunks if you like to bite into a bit of
potato mush. Put them in a large bowl and toss with enough olive oil to coat,
but not to swim in. Add rosemary and a bit of salt and sugar to coat. You don’t
want to be overwhelmed by the salt or sugar, it just helps get a nice brown
crust. Once its all tossed together, put in a single layer on a baking sheet
and stick it in the oven.
Turn them
every 15 minutes or so to get each side of the potatoes browned. Cook til
desired doneness…30 -45 minutes. We like ours extra crispy. Obviously you will
start these before the patty melts.
